Mocha Fudge Cookies


Fudgy baked goods are my favourite kind of baked goods!  These cookies are rich with chocolate-coffee flavour, chock full of chocolate chips and deliciously soft in the middle.

Recipe adapted from: King Arthur Flour
Ingredients
113g butter
210g brown sugar
3/4 tsp baking powder
1 tbsp instant coffee powder
1/2 tsp salt
2 eggs
1 tsp vanilla essence
57g cocoa powder
206g flour
170g chocolate chips
170g chocolate chunks*

*(If you don't have chocolate chunks on hand, you can just use 240g chocolate chips; I used 170g dark chocolate chips and 170g white chocolate chips. You can use whatever type of chocolate you like!)

Method
1. Preheat the oven to 175C (350F).

2. Melt the butter in a microwave-safe bowl.

3. Mix the sugar, baking powder, coffee powder and salt into the melted butter until combined.

4. Add the eggs and vanilla and beat until combined.

5. Fold the cocoa powder and flour into the batter - the dough will be quite sticky, but don't worry, this is fine!

6. Mix the chocolate chips and chocolate chunks into the dough until evenly distributed.

7. Place tablespoon-sized balls of dough onto baking trays lined with baking paper or silicon mats.  You don't need to leave too much space between them as they don't spread out too much.

8. Bake the cookies for 8-10 minutes.  They should have started to crack along the tops but still be soft when you poke them.  Don't over-bake them because you want them to be nice and fudgy!



9. Transfer the cookies to a wire rack to cool, and enjoy!

Mocha Almond Cake


Hello all!  This moist cake topped with mocha icing looks great with some toasted almond slices on top, and tastes great too.  It was my first time using a ring pan for a cake and it's a good way to change things up a bit!

Recipe adapted from: The Australian Women's Weekly Cakes & Slices Cookbook
Ingredients - cake (20 cm (8 inch) ring cake)
1 tbsp instant coffee powder
1/2 cup boiling water
20g cocoa powder
90g butter
250g caster sugar
2 tsp vanilla essence
2 eggs
1/2 cup sour cream
1/2 cup almond meal
155g self raising flour (or 155g plain flour with 2 tsp baking powder)
Flaked almonds for garnish

Ingredients - icing
60g butter
275g icing sugar
1 tbsp cocoa powder
2 tsp instant coffee powder
1 1/2 tbsp boiling water




Method - cake
1. Preheat oven to 190C (375F).  Mix the instant coffee powder with the boiling water and cocoa powder.

2. Cream butter, caster sugar and vanilla essence until light and fluffy.

3. Separate the eggs.

4. Beat the egg yolks into the butter mixture, along with the sour cream.

5. Stir in the almond meal, then the flour as well as the cocoa mixture.



6. Line a 20cm ring cake tin with butter and baking paper, then spread the batter into the pan.

7. Bake the cake for 40 minutes or until an inserted toothpick comes out clean.



8. Let the cake cool in the tin for a bit and then turn it out onto a wire rack.

Method - icing
1. Sift the icing sugar and cocoa and beat it with the butter until combined.

2. Combine the instant coffee with the boiling water and add it to the butter mixture.

3. Spread the icing onto the cooled cake.



4. Garnish the cake with the flaked almonds - toast them first for added aroma and crunch!

This cake is also great in cupcake form.

Chocolate Espresso Cookies


It's been a few posts since there was something chocolatey on this blog, and I thought it was high time to rectify this with these delicious espresso cookies.  They're my favourite kind of cookie (fudgy on the inside, crisp on the outside), with a twist of coffee flavour and I think walnuts add the perfect touch.

Recipe adapted from: Chewy Gooey Crispy Crunchy Melt-In-Your-Mouth Cookies by Alice Medrich
Ingredients
170g dark chocolate (recipe recommends unsweetened for a more 'sophisticated' cookie)
4 tbsp butter
2 eggs
260g white sugar
1 1/2 tsp finely ground coffee
1 tsp vanilla essence
45g flour
1/4 tsp baking powder
1/4 tsp salt
110g dark chocolate chunks/chips
50g walnuts (optional)

Method
1. Melt the butter and 170g chocolate, then set aside.

2. Beat the eggs with the sugar, coffee and vanilla until pale and thick.



3. Stir the chocolate mixture in.

4. Stir the flour, baking powder and salt into the batter.

5. Add the chocolate chunks (or chocolate chips if you're using those), and if you like, add 50g chopped walnuts.


6. Cover the batter and refrigerate it until firm (about an hour, or overnight if you want to wait longer to bake them).

7. When you're ready to bake the cookies, preheat the oven to 175C (350F).

8. Place tablespoons of dough on baking paper-lined baking trays, making sure to leave space between them as the cookies will spread when baked.



9. Bake the cookies for 10 - 12 minutes.  They should be crackly on the surface but still soft and gooey inside.



10. Let the cookies cool, but consume as soon as possible!  They're most delicious when they're still warm from the oven!
